
Fried Corn with Bacon and Peppers
FRIED CORN WITH BACON AND PEPPERS
Ingredients
- 2-3 cans drained, crispy corn or 1 large bag of rinsed frozen corn
- 3-4 slices bacon, cubed
- 1/2 cup onions, chopped
- 1/2 of a pasilla, poblano, or Anaheim pepper, diced  *I prefer pasilla*
- small can of hatch green chilis, diced and drained
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- Coarse ground black pepper to taste
- Fry bacon until almost crispy. Add onions and peppers. Saute 2-3 minutes until cooked but not limp. Add corn. Stir. Add hatch chilis, garlic powder, and onion powder. Stir. Add black pepper. Serve.
If you want to add some heat, substitute 1/2 jalapeno pepper for the pasilla pepper, or, as I do sometimes, use both.
