Fried Corn with Bacon and Peppers

 

FRIED CORN WITH BACON AND PEPPERS

Ingredients

  • 2-3 cans drained, crispy corn or 1 large bag of rinsed frozen corn
  • 3-4 slices bacon, cubed
  • 1/2 cup onions, chopped
  • 1/2 of a pasilla, poblano, or Anaheim pepper, diced   *I prefer pasilla*
  • small can of hatch green chilis, diced and drained
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • Coarse ground black pepper to taste
  • Fry bacon until almost crispy. Add onions and peppers. Saute 2-3 minutes until cooked but not limp. Add corn. Stir. Add hatch chilis, garlic powder, and onion powder. Stir. Add black pepper. Serve.

If you want to add some heat, substitute 1/2 jalapeno pepper for the pasilla pepper, or, as I do sometimes, use both.
